This year I have more weddings and engagement parties to attend than ever before. I’m particularly excited about one of my girlfriend’s weddings that will be in Positano this summer! When it comes to gifts, I always head to Macy’s because I know they have every single registry item imaginable – from gorgeous Le Creuset pots, to Vitamix blenders, Kate Spade dishes, and KitchenAid mixers. I bought one of my girlfriends this KitchenAid mixer for her wedding a few weeks ago and couldn’t resist ordering one for myself. Macy’s carries them in a zillion different colors, but I personally love the classic look of the silver chrome. With Valentine’s Day coming up, I thought it would be fun to put my KitchenAid to use so I whipped up these yummy gluten free vanilla coconut cupcakes. The recipe was super simple – just vanilla, coconut oil, honey, baking powder, almond meal and eggs. My sister is paleo and she approved ;) If you’re in need of a wedding gift I highly recommend the KitchenAid, as well as a Le Creuset pot (perfect for the gal that loves to cook), a Vitamix blender (you can’t go wrong – I seriously use mine everyday), or a beautiful set of Kate Spade dishes (these black and white ones are timeless).
